The core product of Calihan Pork Processors, Inc. is pre-rigor pork.

 

  • Sows are slaughtered and hot boned.

  • The process from slaughter to finished product covers a span of approximately 45 to 55 minutes.

  • We can produce pre-rigor pork with a chemical lean of 72 percent to 85 percent.

  • The finished raw pork is a ½ inch chopped product with a controlled temperate of 28 to 32 degree F.

  • Typical production has 1% to 2% salt and 1% to 3% water added.

  • All pre-rigor is sold in combos.  Most combos weigh approximately 2000 pounds.

  • Our plant capacity is over 400 sows per day.

  • Whole Boneless Hams:  Skinned and defatted

    hams; ham muscles, denuded; whole boneless

    skinned and defatted hams

  • Canadian Backs:  Whole and silver skin removed

  • Spareribs:  3-5 and 5 up; St. Louis style ribs

  • Back Ribs:  2 ¼ down and 2 ¼ up

  • Boneless Pork Tenderloins:  50 pound boxes – fresh or frozen

  • Pork Riblets:  40 pound boxes – fresh or frozen

  • Pork Hearts:  50 pound wax boxes – fresh or frozen

  • Pork Tongues:  30 pound boxes – fresh or frozen
