The core product of Calihan Pork Processors,
Inc. is pre-rigor pork.

Sows are slaughtered and hot boned.

The
process from slaughter to finished product covers a span of
approximately 45 to 55 minutes.

We
can produce pre-rigor pork with a chemical lean of 72 percent to 85
percent.

The
finished raw pork is a ½ inch chopped product with a controlled
temperate of 28 to 32 degree F.

Typical production has 1% to 2% salt and 1% to 3% water added.

All
pre-rigor is sold in combos. Most combos weigh approximately 2000
pounds.

Our
plant capacity is over 400 sows per day.
